This frosting is so light and yummy.  I love it so much that I eat it with a spoon.  It's not too sweet so I can eat more of it.  The more frosting there is, the happier people there are.  The government should use this strategy to keep the people happy.

Ingredients:
1 8 oz. of cream cheese (room temp.)
1 cup of very cold heavy cream
2 cups of powdered sugar
1 tsp of vanilla extract

How to:
1.  Chill your mixing bowl for about 15-20 minutes.
2.  Add cream cheese and beat at the medium to high speed until it becomes light and fluffy.
3. Add heavy cream and continue to beat until the mixture blend very well together.  It will become light and fluffy again.
4.  Add powdered sugar gradually, then vanilla extract and continue beating until everything is well combined.
5.  The result is a very light and fluffy frosting.
6.  If possible, frost your cupcakes immediately so you get to eat them real soon.
7.  Make sure the cupcakes are completely cool before frosting them.

Not sure what I'm doing wrong. The cream cheese cupcake frosting tastes grreat, but it came out super runny & unpipeable (Is that a word?).

I followed the directions exactly. I'm wondering if it has something to do with the weather (It's very hot right now), or if I overmixed it.

Thanks for responding so quickly. I'm making 2 batches of your cupcake frosting. I bought ingredients to make 1 batch to try it out before a bridal shower I'm attending tomorrow. So, thanks for writing back right away.

The only thing I didn't do was to add the heavy whipping cream slowly. I just poured it in all at once (But, I did whip the cream cheese on medium speed till it was light & fluffy & I did chill my bowl, heavy whipping cream & electric beater wire whisks).

Hope that does the trick (Adding the heavy whipping cream slowly).

Lynn,

Before you finish with the whole cup of whip cream, if the frosting looks ready to you, stop there! You may end up not needing the whole cup. Best of luck!

I was wondering about that too (If I could cut down a little on the heavy whipping cream). I'll add it slowly & will stop when it looks ready.
